lasagne the continue saga of the ground beef kitchen cowboy

it was 20 minutes to five and i realised 3 things. dinner wasn't made , we had used all the the tacos but not all the mexican mince, and if i didnt do something fast i would have a mutitude of hungry family members and no food to placate them
so of course put on my spurs and ten gallen hat and headed to the kitchen to make
mexican lasagne!
half a batch mexican mince
1/2 a 500ml jar pasta sauce
8 leaves of spinach from my garden, washed and shredded
250gms lasagne sheets
500ml skim milk
1 teaspoon stock powder
3 table spoons corn flour mixed into 50mls of water
200gms grated cheddar cheese
method
1. put the milkand stock powder in a medium pot on high heat. bring to the boil then turn down to a simmer.
2. add the corn flour mix to the simmering wilk and whisk till the mix re boils and thickens
3. in a medium baking dish (25x25cm and three inches high) start putting the lasagne togeather. place a little mince in the bottom followed by a layer of pasta sheets, then go mince, spinach, thickened milk mix then the next layer of pasta, repeat once reserving enough of the milk mix to coat the pasta on top. place grated cheese on last and place into a moderate oven (180deg cels) for 20min to 1/2 an hour depending on the cooking time stated on the packet for the pasta sheets. cut, serve, beautiful!
