The big pantry clean out

Yesterday I had unenviable task of cleaning out the pantry. Now even for the average household this can be a bit of a daunting task, but I’d wager that my obsession with ingredients from the wild and weird side, plus the fact that our cupboard has many hidey holes, Makes the task more akin to archaeology then domestic duty.
Here is a pared down list of some of the stuff I found. 8 packets of flavoured jelly, 20 odd single serves powdered soup, rice paper, lasagne sheets, 4 different types of gluten free flour, 2 packets gelatine, a x-mas pudding, sumac, Sichuan pepper… and list goes on to include things I bought once for cooking competitions, one off dishes and stuff people gave us to try. I ended up with quite a large box, and the plan is that I am going to use it all. I started last night with lasagne and jelly and tonight I think I will be trying out some rice paper rolls, my kids wont try them but I have the left over lasagne.
Rice paper rolls filled with whatever I have in the fridge ½ green capsicum julienne
½ red capsicum julienne
1 med carrot shaved (with peeler)
good handful of coriander from the garden, chopped
105grm tin of light pink salmon
1tble spoon chopped pickled ginger.
1tbl spoon low joule sweet chilli sauce
rice paper
method
once you have prepared the mix of vegetables test the seasoning and adjust to your liking.
Soak the rice paper till soft, place onto dry tea towel and dab the tops side dry with another towel. Place a small amount of the mix in the middle and toward the bottom edge. Bring the bottom edge over the mix and pull back to tighten the roll. Fold in the left side then roll over again before folding the other side in. complete the roll so that there is no loose flaps of rice paper.
Be sure to dry the paper off properly before rolling otherwise it won’t stick. Also be careful not to soak the paper too long or it will simply fall apart. Eat with your favourite dipping sauce or on their own
This is a great meal by itself or you can do these as a canapé just cut them in half once they are rolled.
